Dibs Ice Cream are bite-sized chocolate-covered ice cream snacks. Originally created by Nestlé and now under the Drumstick brand, they’re perfect for on-the-go frozen snacking.

Ingredients
  

  • 2 cups ice cream – Choose your favorite flavor like vanilla chocolate, or coffee.
  • 1 ½ cups chocolate chips or melting wafers – Semi-sweet or milk chocolate both work well.
  • 1 tablespoon coconut oil optional – Helps the melted chocolate coat smoothly and harden nicely.
  • 1 teaspoon instant espresso powder optional – Adds depth, especially if using vanilla or chocolate ice cream.
  • Parchment paper – For lining your tray so the scoops don’t stick.
  • Optional toppings – Try crushed nuts sprinkles, or cookie crumbs to add texture after dipping.

  • 1 Small cookie scoop For making evenly sized ice cream bites
  • 1 Baking sheet Used to freeze the scooped ice cream bites
  • 1 Parchment paper Prevents sticking when freezing

Method
 

  1. Roll your ice cream into mini bites:
  2. Scoop small, rounded portions of ice cream using a melon baller or teaspoon. Keep them bite-sized — they should be easy to pop in your mouth! Place them on a parchment-lined tray.
  3. Let them freeze solid:
  4. Slide the tray into the freezer for at least 1 hour. The firmer the bites, the easier they’ll be to dip without melting.
  5. Coat the frozen scoops:
  6. Working quickly, use a fork or skewer to dip each frozen ice cream ball into the melted chocolate. Tap off excess chocolate before placing them back on the tray.
  7. Add toppings (just for fun!):
  8. If you want extra texture or flavor, sprinkle chopped nuts, crushed cookies, or colorful sprinkles over the wet chocolate before it hardens.
  9. Freeze once more, then enjoy:
  10. Pop the tray back into the freezer for about 20 minutes so the coating fully sets. Once firm, transfer your homemade Dibs to a container and enjoy anytime you need a frozen snack fix!

Notes

  • Use firm ice cream: It’s easier to shape and won’t melt as fast when dipping. If it's too soft, scoop it and refreeze before coating.
  • Quick hands = less mess: Chocolate sets fast on frozen ice cream, so work in small batches if needed to keep everything cold.
  • Make it ahead: These bites stay fresh in an airtight container in the freezer for up to 2 weeks — perfect for party prep or late-night cravings.
